Ingredients
Method
Preparation
- Begin by patting the chicken drumsticks dry with paper towels.
- Set up a dredging station with flour seasoned with salt, pepper, and paprika, beaten egg, and crushed cornflakes.
- Coat each drumstick first in flour, then in egg, and finally in cornflakes, pressing down to create an even coating.
Cooking the Chicken
- Heat oil in a pan over medium-high heat until shimmering.
- Carefully add the drumsticks, cooking in batches if necessary until golden brown and cooked through, about 12-15 minutes for frying.
- If baking, preheat the oven to 425°F and place the chicken on a parchment-lined baking sheet, baking for 30-35 minutes.
Cooking the Fries
- Prepare the thick-cut fries as directed on the package or season and cook until golden.
Making the Slaw
- In a bowl, combine the coleslaw mix, mayo, and vinegar. Toss until well coated.
Serving
- Plate the chicken with a generous serving of fries and a scoop of creamy slaw on the side.
Notes
For a vegan version, use plant-based chicken alternatives and flax eggs. Store leftovers in the fridge for up to four days or freeze for up to three months.
