Ingredients

Main Ingredients
  • 2 pieces breakfast sausages Opt for sausages made from fresh meat for richer flavor.
  • 2 pieces eggs For softer scrambled eggs, whisk in a splash of cream or milk.
  • 1 tbsp butter Use dairy-free butter for a dairy-free option.
  • 1 cup diced potatoes Choose firm, blemish-free potatoes for best results.
  • 1 tbsp olive oil This helps crisp up the potatoes during sautéing.
  • 1 piece croissant Lightly toast for a delightful crunch.
  • to taste Salt & pepper
  • 1/2 tsp paprika Adds a nice flavor to the potatoes.
  • to taste Fresh parsley (optional) For garnish, adds freshness.

Method

Preparation
  1. Heat a skillet over medium heat. Add diced potatoes mixed with olive oil, salt, pepper, and paprika. Sauté until golden brown and crispy, about 10-15 minutes.
  2. In another skillet, add the breakfast sausages. Cook them until they’re browned, about 8-10 minutes.
  3. In the same skillet used for the potatoes, melt butter over low heat. Crack in the eggs and scramble gently with a spatula until fluffy and soft, about 3-4 minutes.
  4. While the eggs are cooking, lightly toast or warm the croissant until it’s golden and slightly crispy.
  5. Now, arrange everything on a plate: potatoes, sausages, scrambled eggs, and the warm croissant. Garnish with chopped parsley.

Notes

Serve with fresh fruit salad or yogurt and pair with freshly squeezed orange juice or coffee. Store leftovers in an airtight container for up to three days. For meal prep, cook large batches of potatoes and sausages and store in portions.
