Preparation
- Heat a large skillet over medium heat. Add the ground beef and break it up with a spoon.
- Once it starts to brown, add the chopped onion and cook for about 3 to 4 minutes until the onion softens. Add garlic and stir for 30 seconds.
- If there's excess grease, spoon off some but leave a little for flavor. Add the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir well and toast the spices for about 30 seconds.
- Stir in the tomato paste until it coats the meat, then add the water or broth. Scrape the bottom of the pan and let it simmer for 5 to 7 minutes until the liquid reduces into a saucy coating.
- Turn off the heat and stir in the lime juice or vinegar. Taste and adjust salt and heat as preferred.
Notes
This recipe reheats well and can be stored in the fridge for up to 4 days or frozen for 3 months. Warm in a skillet or microwave before serving.
