Preparation
- Start by lightly buttering both slices of bread until the butter melts and shimmers on the surface.
- Toast the bread in a pan or toaster until golden brown and crispy, avoiding burning the edges.
- While the bread is toasting, crack the eggs into a pan and cook sunny-side up until the whites are firmly set, about three minutes.
- Slice the apple, and arrange it with the grapes and strawberries on a plate.
- Once the toast is ready, place each egg over the toast and season generously with salt and black pepper.
- Serve with a spoonful of ricotta or cottage cheese and a drizzle of honey if desired.
Notes
Best enjoyed fresh, but can be stored in the fridge for up to two days. For freezing, wrap portions tightly and store for up to one month. Reheat toast in a toaster and gently warm eggs in a pan.
