Ingredients
  

For the Chicken
  • 600 g Diced Skinless Chicken Breast Use firm pieces for the best results.
  • 1 unit Juice From 1 Lime
  • to taste Salt
  • to taste Onion Powder
  • to taste Garlic Powder
  • to taste Cumin
  • to taste Chilli Powder
  • to taste Smoked Paprika
For the Sauce
  • 140 g Low Fat Greek Yoghurt Can be substituted with dairy-free yogurt.
  • 2-4 tsp Chipotle Sauce Adjust to taste.
For the Pico de Gallo
  • 2 unit Diced Tomatoes
  • 1 unit Diced Seedless Jalapeño
  • 1 unit Diced White Onion
  • to taste Coriander/Cilantro
  • Juice From 2 limes Juice From 2 Limes
  • to taste Salt
  • to taste Pepper
For the Bowl Assembly
  • 130 g Cooked Mexican Style Rice Can be pre-cooked to save time.
  • to taste Lettuce Use your choice of lettuce.
  • 50 g Corn

Method
 

Preparation
  1. In a large bowl, combine the diced chicken breast with lime juice, salt, onion powder, garlic powder, cumin, chili powder, and smoked paprika. Let it marinate for at least 30 minutes.
  2. In a small bowl, mix the low-fat Greek yogurt with chipotle sauce and adjust the spice level according to your taste.
  3. In another bowl, combine diced tomatoes, jalapeño, white onion, coriander, lime juice, salt, pepper, and garlic powder to make the pico de gallo.
Cooking
  1. Heat a skillet over medium heat and add the marinated chicken. Cook until fully cooked, about 7-10 minutes, until there is no pink inside.
Assembly
  1. In meal prep containers, layer the components: cooked rice, lettuce, pico de gallo, corn, and top with the cooked chicken.
  2. Drizzle some chipotle sauce on top before serving.
Storage
  1. Seal containers and store in the fridge for up to three days. For longer storage, freeze for up to three months, and thaw overnight before reheating.

Notes

For extra flavor, let the chicken marinate overnight. Adjust pico de gallo seasonings before serving to enhance freshness.
