Ingredients

For the Chicken Marinade
  • 4 pieces chicken drumsticks Choose high-quality, free-range, or organic.
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika Use high-quality for best flavor.
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 tbsp honey Can substitute with maple syrup.
  • 1 tbsp soy sauce Use gluten-free soy sauce for a gluten-free option.
For the Vegetables
  • 2 medium zucchinis, sliced thick Select firm ones with glossy skin.
  • 1/2 tsp garlic powder (for zucchini)
  • Salt & pepper to taste (for zucchini)
  • 2 cups spinach or kale Can replace spinach with kale.
  • 2 cloves garlic, sliced
  • 1 tbsp olive oil (for greens)
  • a pinch salt
  • a pinch black pepper

Method

Preparation
  1. In a mixing bowl, combine olive oil, paprika, smoked paprika, garlic powder, onion powder, honey, soy sauce, salt, and pepper. Mix well until fragrant and thick.
  2. Add chicken drumsticks to the marinade, ensuring each piece is thoroughly coated.
Cooking the Chicken
  1. Preheat oven to 400°F (200°C). Place the drumsticks on a baking sheet lined with parchment paper and bake for 35-40 minutes, until golden and the internal temperature reaches 165°F (75°C).
Cooking the Vegetables
  1. While the chicken bakes, heat olive oil in a skillet over medium heat. Add sliced zucchini, garlic powder, salt, and pepper; sauté for 5-7 minutes until golden and tender.
  2. In a separate pan, heat another tablespoon of olive oil, add sliced garlic until fragrant, then toss in spinach or kale. Cook until wilted but vibrant in color.
Serving
  1. Plate the chicken drumsticks alongside sautéed zucchini and garlicky greens for a colorful presentation.

Notes

For added flavor, consider adding a tablespoon of apple cider vinegar to your marinade. Let cooked chicken rest for a few minutes before serving for juicier meat.
