Preparation
- Cook your base: Prepare rice or pasta as per package instructions.
- Cook the chicken: Dice and sauté chicken with oil, salt, pepper, and garlic, or use leftover rotisserie chicken.
- Blanch or microwave the broccoli until bright green and slightly tender.
- Mix the sauce: In a large bowl, combine cream of chicken soup or homemade sauce, a splash of milk, seasonings, and half the cheese. Taste and adjust seasoning if necessary.
- Combine and bake: Mix rice, chicken, broccoli, and sauce. Spread in a greased baking dish, top with remaining cheese and breadcrumbs mixed with melted butter.
- Bake at 375°F for about 25 to 30 minutes until bubbly. Broil for 1 to 2 minutes if extra browning is desired.
Notes
Store leftovers in refrigerator for up to 4 days, or freeze for up to 2 months. Reheat with a splash of water or milk to maintain creaminess.
