  • 2 lbs Boneless skinless chicken breasts or thighs Thighs stay extra juicy.
  • 4 cups Fresh or frozen broccoli If using frozen, thaw and pat dry.
  • 2 cups Cooked rice or pasta Rice is recommended.
  • 1 can Cream of chicken soup Or a homemade sauce with butter, flour, milk, and broth.
  • 1 cup Cheddar cheese (shredded) Can mix with mozzarella or parmesan as desired.
  • 1 clove Garlic (minced) Garlic powder can also be used.
  • 1 medium Onion (chopped) Onion powder works for convenience.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Black pepper Adjust to taste.
  • 1 tsp Paprika
  • 1 pinch Dried thyme Optional for added flavor.
  • 1 cup Breadcrumbs or crushed crackers For the crunchy topping.
  • 2 tbsp Butter (melted) To mix with the breadcrumbs.

Method
 

Preparation
  1. Cook your base: Prepare rice or pasta as per package instructions.
  2. Cook the chicken: Dice and sauté chicken with oil, salt, pepper, and garlic, or use leftover rotisserie chicken.
  3. Blanch or microwave the broccoli until bright green and slightly tender.
  4. Mix the sauce: In a large bowl, combine cream of chicken soup or homemade sauce, a splash of milk, seasonings, and half the cheese. Taste and adjust seasoning if necessary.
  5. Combine and bake: Mix rice, chicken, broccoli, and sauce. Spread in a greased baking dish, top with remaining cheese and breadcrumbs mixed with melted butter.
  6. Bake at 375°F for about 25 to 30 minutes until bubbly. Broil for 1 to 2 minutes if extra browning is desired.

Notes

Store leftovers in refrigerator for up to 4 days, or freeze for up to 2 months. Reheat with a splash of water or milk to maintain creaminess.
