Ingredients
  

For the Salmon
  • 2 fillets salmon fillets, cubed Look for wild-caught varieties.
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt Use smoked sea salt for enhanced flavor.
  • 1 tsp lemon juice Add extra to taste.
For the Bowl
  • 2 pcs boiled eggs, halved Prep these ahead for convenience.
  • 1 avocado sliced Squeeze lemon juice over slices to prevent browning.
  • 1 cup cherry tomatoes, halved
  • 1 cup mushrooms, sliced
  • 2 cups arugula Can substitute with spinach.
  • 1 tbsp olive oil Use for sautéing mushrooms.
  • 1 tsp lemon juice Drizzle over the assembled bowl.
  • to taste fresh parsley, chopped For garnish.
  • to taste Salt & pepper Adjust to preference.

Method
 

Preparation
  1. Toss cubed salmon with the olive oil, paprika, garlic powder, salt, pepper, and lemon juice.
Cooking
  1. Heat a skillet over medium-high heat and add the salmon. Cook for 3-4 minutes until golden brown.
  2. In the same skillet, add another tablespoon of olive oil with a pinch of salt and pepper, then sauté sliced mushrooms until caramelized, about 5-7 minutes.
Assembly
  1. On a large plate or bowl, arrange arugula as a base and layer the avocado slices, halved cherry tomatoes, boiled eggs, and sautéed mushrooms.
  2. Top with the cooked salmon and sprinkle with parsley and drizzle with olive oil and lemon juice.

Notes

The dish can be stored in the fridge for about three days. For a spicy version, add cayenne pepper to the marinade. For a vegetarian version, substitute salmon with marinated tofu or chickpeas.
