  • 1 cup cherry tomatoes
  • 1 pound baby potatoes Can be substituted with zucchini or bell peppers for a lighter twist.
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Skewers (wooden or metal) For a dairy-free option, ensure skewers are cross-contamination-free.

Preparation
  1. Begin by preheating your grill to medium-high heat.
  2. In a medium bowl, combine the olive oil, minced garlic, chopped rosemary, salt, and pepper to create the marinade.
  3. Cut the steak into 1-inch cubes and toss them into the marinade. Let it sit for at least 30 minutes.
  4. Bring a pot of salted water to a boil. Add the baby potatoes and parboil until tender, about 10 minutes. Drain well and let cool.
Assembling and Cooking
  1. Thread the marinated steak, cherry tomatoes, and baby potatoes onto the skewers, alternating for a colorful presentation.
  2. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally until the steak reaches your desired doneness.
  3. Remove the kabobs from the grill and let rest for a few minutes before serving.

Notes

For an appealing presentation, serve the kebabs on a large platter with fresh herbs and lemon wedges. Store leftovers in an airtight container in the refrigerator for up to 3 days.
