Marinating the Chicken
- In a large bowl, coat the drumsticks with olive oil, garlic powder, paprika, onion powder, thyme, salt, and pepper. Let them marinate for about 20 minutes.
Preparing the Fries
- Toss the sweet potato fries with olive oil, paprika, garlic powder, salt, and pepper. Arrange them on a baking sheet without overcrowding.

- Preheat the oven to 425°F (220°C) and bake the chicken and fries together for 35-40 minutes until the chicken is crispy and fries caramelize.
Making the Coleslaw
- In a separate bowl, combine the cabbage, carrots, cucumber, mayonnaise, vinegar, sugar, salt, and pepper. Toss until creamy and well-coated.
Plating and Serving
- Arrange the roasted chicken drumsticks on a plate with sweet potato fries and creamy coleslaw. Sprinkle cucumber slices with chili flakes for an added kick.
Notes
Refrigerate leftovers in an airtight container for up to 4 days. For longer storage, freeze the chicken and fries for up to 3 months. Avoid overcrowding the baking sheet to ensure even cooking.
