Ingredients
  

For the Chicken
  • 4 pieces chicken drumsticks Use fresh, organic poultry if possible.
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Sweet Potato Fries
  • 2 large sweet potatoes, cut into fries Should be firm and heavy.
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Creamy Coleslaw
  • 3 cups shredded cabbage
  • 1/2 cup shredded carrots
  • 1/2 piece cucumber, diced
  • 1/3 cup mayonnaise Can substitute with Greek yogurt for a lighter option.
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • to taste salt and pepper
  • 1/2 piece cucumber, thinly sliced
  • 1/2 tsp chili flakes Optional for added heat.

Method
 

Marinating the Chicken
  1. In a large bowl, coat the drumsticks with olive oil, garlic powder, paprika, onion powder, thyme, salt, and pepper. Let them marinate for about 20 minutes.
Preparing the Fries
  1. Toss the sweet potato fries with olive oil, paprika, garlic powder, salt, and pepper. Arrange them on a baking sheet without overcrowding.
Baking
  1. Preheat the oven to 425°F (220°C) and bake the chicken and fries together for 35-40 minutes until the chicken is crispy and fries caramelize.
Making the Coleslaw
  1. In a separate bowl, combine the cabbage, carrots, cucumber, mayonnaise, vinegar, sugar, salt, and pepper. Toss until creamy and well-coated.
Plating and Serving
  1. Arrange the roasted chicken drumsticks on a plate with sweet potato fries and creamy coleslaw. Sprinkle cucumber slices with chili flakes for an added kick.

Notes

Refrigerate leftovers in an airtight container for up to 4 days. For longer storage, freeze the chicken and fries for up to 3 months. Avoid overcrowding the baking sheet to ensure even cooking.
