Preparation
- Preheat the oven to 300°F (150°C).
- Heat olive oil in a Dutch oven over medium-high heat.
- Season the short ribs with salt and pepper, and sear them on all sides until browned (about 3-4 minutes per side).
- Remove ribs from the pot and set aside.
- Add the diced onion, carrots, celery, and minced garlic and cook until fragrant and softened (about 5-7 minutes).
- Stir in the tomato paste and allow to cook for 1-2 minutes.
- Pour in the red wine, deglazing the pot and scraping up any browned bits.
- Add the beef broth, thyme, and bay leaf, then return the short ribs to the pot.
- Bring the mixture to a gentle simmer.
- Cover the pot with a lid and transfer to the oven.
- Braise for 3 hours until the meat is tender.
Serving
- Serve the short ribs with the sauce spooned over them.
- Pair with creamy mashed potatoes or crusty bread.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat gently on stovetop with a splash of beef broth if needed.
