  • 4 pieces bone-in beef short ribs Choose well-marbled cuts for best flavor.
  • 2 cups red wine Use a good quality local red wine for authentic flavor.
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth Can substitute with vegetable broth for a lighter version.
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme
  • 1 leaf bay leaf
  • to taste salt and pepper
  • as needed olive oil for searing

Method
 

Preparation
  1. Preheat the oven to 300°F (150°C).
  2. Heat olive oil in a Dutch oven over medium-high heat.
  3. Season the short ribs with salt and pepper, and sear them on all sides until browned (about 3-4 minutes per side).
  4. Remove ribs from the pot and set aside.
  5. Add the diced onion, carrots, celery, and minced garlic and cook until fragrant and softened (about 5-7 minutes).
  6. Stir in the tomato paste and allow to cook for 1-2 minutes.
  7. Pour in the red wine, deglazing the pot and scraping up any browned bits.
  8. Add the beef broth, thyme, and bay leaf, then return the short ribs to the pot.
  9. Bring the mixture to a gentle simmer.
  10. Cover the pot with a lid and transfer to the oven.
  11. Braise for 3 hours until the meat is tender.
Serving
  1. Serve the short ribs with the sauce spooned over them.
  2. Pair with creamy mashed potatoes or crusty bread.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat gently on stovetop with a splash of beef broth if needed.
