- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and translucent, about 3-5 minutes.
- Add the grated ginger and cubed pumpkin to the pot, stirring for about 3-4 minutes.
- Pour in the vegetable or chicken broth, bringing the mixture to a boil. Once boiling, reduce the heat and let it simmer until the pumpkin is tender, approximately 20 minutes.
- Using an immersion blender, puree the soup until smooth. Stir in the coconut milk and season with salt and pepper to taste.
- Serve hot and garnish with optional toppings like pumpkin seeds and fresh herbs.
Notes
Store leftover soup in an airtight container in the refrigerator for up to 5 days. For freezing, use a freezer-safe container for up to 3 months. To reheat, warm gently on the stovetop.
