Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In another large bowl, mix the granulated sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- In a separate bowl, beat the softened cream cheese, powdered sugar, egg yolk, and the remaining vanilla extract until smooth.
- Pour half of the pumpkin batter into the prepared loaf pan and spread the cream cheese mixture over it. Top with the remaining pumpkin batter.
- Using a knife, gently swirl the cream cheese mixture into the pumpkin batter.
- Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Store leftover pumpkin bread in an airtight container for up to 4 days or freeze for up to 3 months. Reheat in the oven to retain moisture.
