  • 2 cloves Garlic (minced)
  • 1 tbsp Ginger (minced)
  • 1 medium Bell pepper (sliced)
  • 1 medium Onion (chopped)
  • 2 tbsp Olive oil
  • to taste Salt and pepper
  • for garnish Green onions Adds vibrant color when serving.

Method
 

Preparation
  1. Heat the olive oil in a large pan over medium heat until it shimmers.
  2. Season the chicken with salt and pepper, then add it to the pan. Cook until browned on both sides, about 6-8 minutes.
  3. Add minced garlic and ginger to the pan and cook for 1-2 minutes until fragrant.
  4. Stir in the rice, pineapple chunks, and sliced bell pepper to combine with the chicken.
  5. Add enough water or chicken broth to cover the rice. Bring to a boil, reduce heat, and cover.
  6. Simmer for 15-20 minutes until the rice is tender and chicken is cooked through.
  7. Fluff the rice with a fork and serve hot, garnished with green onions.

Notes

For meal prep, consider portioning out servings ahead of time. The dish keeps well in the fridge for up to 3 days and can be frozen for longer storage.
