  • 2 pieces large chicken breasts, sliced in half lengthwise
  • 1 teaspoon salt for seasoning
  • 1 teaspoon black pepper for seasoning
  • 1/4 cup flour light dusting for browning
  • 2 tablespoons olive oil for cooking
  • 1 tablespoon butter for cooking
  • 3-4 cloves garlic, minced
  • 1/3 cup sun dried tomatoes, chopped oil-packed preferred
  • 1 cup chicken broth for sauce
  • 3/4 cup heavy cream
  • 1/2 cup parmesan cheese, grated freshly grated preferred
  • 1 teaspoon Italian seasoning
  • 1 teaspoon red pepper flakes optional for heat
  • 1 tablespoon fresh basil or parsley for garnish

Method
 

Preparation
  1. Pat your chicken dry, then season both sides with salt and pepper. Lightly dust with flour.
  2. Heat olive oil and butter in a large skillet over medium heat. Add the chicken and cook until golden on both sides and cooked through (4 to 6 minutes per side). Move chicken to a plate.
  3. In the same skillet, add garlic and sauté for about 30 seconds, being careful not to let it burn.
  4. Add sun dried tomatoes, then pour in chicken broth. Scrape up the browned bits from the pan.
  5. Lower the heat and stir in heavy cream, parmesan, Italian seasoning, and optional red pepper flakes. Let simmer until slightly thickened.
  6. Put the chicken back in the skillet and spoon sauce over it. Simmer for an additional 2 to 3 minutes.
  7. Taste the sauce and adjust seasoning as needed.

Notes

Serve immediately for best results. Store leftovers with the sauce to keep chicken moist.
