- Pat your chicken dry, then season both sides with salt and pepper. Lightly dust with flour.
- Heat olive oil and butter in a large skillet over medium heat. Add the chicken and cook until golden on both sides and cooked through (4 to 6 minutes per side). Move chicken to a plate.
- In the same skillet, add garlic and sauté for about 30 seconds, being careful not to let it burn.
- Add sun dried tomatoes, then pour in chicken broth. Scrape up the browned bits from the pan.
- Lower the heat and stir in heavy cream, parmesan, Italian seasoning, and optional red pepper flakes. Let simmer until slightly thickened.
- Put the chicken back in the skillet and spoon sauce over it. Simmer for an additional 2 to 3 minutes.
- Taste the sauce and adjust seasoning as needed.

Serve immediately for best results. Store leftovers with the sauce to keep chicken moist.
