Ingredients
  

For the smash burgers
  • 1 pound ground beef 80/20 Use ground beef with a fat content of 80/20 for the best flavor and juiciness.
  • to taste none salt Salt right after smashing for best results.
  • to taste none black pepper Season after smashing.
  • 4 to 8 slices American cheese Or your favorite melty cheese.
  • 4 pieces soft burger buns Brioche or potato rolls are recommended.
  • 1 tablespoon butter or mayo For toasting buns.

Method
 

Preparation
  1. Preheat the pan over medium-high to high heat for a few minutes until hot enough that a drop of water sizzles.
  2. Spread butter or mayo on the cut sides of the buns and toast them in the pan until golden. Set aside.
  3. Divide the beef into 8 equal portions for double patties, or 4 portions for single patties. Roll gently into loose balls.
Cooking
  1. Place a ball onto the hot pan and press down hard with a spatula until the patty is thin, about 4 inches wide.
  2. Sprinkle salt and pepper on the smashed patty.
  3. Cook for 60 to 90 seconds until the edges are browned, then scrape under and flip the burger.
  4. Add cheese on top right after flipping and cook for another 30 to 60 seconds until melted.
Assembly
  1. Stack two patties for the classic diner style, add your favorite toppings, close the bun, and serve while hot.

Notes

Keep toppings simple for the best experience. Toasting the buns ensures they don't get soggy.
