Ingredients
Method
Marinate the Chicken
- In a large bowl, whisk together olive oil, honey, soy sauce, minced garlic, paprika, salt, and pepper. Ensure the mixture is fragrant and slightly sweet.
- Marinate the chicken thighs for at least 30 minutes.
Prepare the Vegetables
- Preheat your oven to 400°F (200°C). Spread the baby potatoes and peeled carrots on a baking tray, drizzle with olive oil, and sprinkle lightly with salt.
- Roast for about 30-35 minutes until they are tender and golden, ensuring not to overcrowd the tray.
Roast the Chicken
- Remove the marinated chicken thighs from the bowl and place them on a separate baking sheet.
- Roast for 35-40 minutes until beautifully caramelized and the internal temperature reaches 165°F.
- Baste the chicken halfway through for juiciness.
Prepare Remaining Ingredients
- Steam the broccoli until bright green and tender, about 5 minutes.
- In a pot, heat the sweet corn until heated through.
- Boil the eggs for 8-9 minutes, then peel and halve.
Serve
- Arrange the roasted chicken thighs on a platter alongside the potatoes, carrots, broccoli, sweet corn, and halved eggs.
- Serve with a light salad or crusty bread; chilled white wine pairs well.
