Ingredients
  

For the Lamb Chops
  • 8 pieces lamb loin chops
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp butter
  • 1 tsp fresh thyme leaves
For the Mashed Potatoes
  • 2 lbs potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/2 cup warm milk
  • 1 tsp salt and pepper to taste
For the Sides
  • 2 cups broccoli florets
  • 2 cups butternut squash, cubed
  • 1 tbsp olive oil
  • 1 tsp fresh thyme
  • 1 tsp salt and pepper to taste

Method
 

Preparation of Vegetables
  1. Preheat your oven to 400°F (200°C). Toss butternut squash with olive oil, thyme, salt, and pepper in a baking dish. Roast in the oven for 25 minutes until the squash turns golden and becomes tender.
Making Mashed Potatoes
  1. In a large pot, boil the cubed potatoes until fork-tender, about 15 minutes. Drain the potatoes, then mash them with butter, warm milk, salt, and pepper until smooth.
Cooking Lamb Chops
  1. Season lamb chops generously with salt, pepper, garlic powder, and paprika. Heat olive oil in a skillet over medium-high heat. Sear the lamb for 3-4 minutes on each side until browned.
Preparing Honey Garlic Glaze
  1. In the same skillet, melt butter and sauté minced garlic for about 30 seconds until fragrant. Stir in honey, soy sauce, and thyme, and let it simmer until the glaze thickens slightly.
Assembling and Serving
  1. On each plate, spread a mound of creamy mashed potatoes, top with glazed lamb chops, and arrange broccoli and roasted butternut squash on the side. Drizzle any extra glaze over the chops.

Notes

For lower-carb options, substitute potatoes with cauliflower or use almond milk for dairy-free mashed potatoes. Lamb should have bright red color with fine marbling for flavor.
