  • 2 cups chicken broth

  • 1 cup asparagus, cut into bite-sized pieces
  • 1 cup shredded cheese (e.g., mozzarella or cheddar) Consider using aged white cheddar for increased flavor.
  • 1 cup heavy cream Can substitute with low-fat milk or plant-based cream for a lighter version.
  • 2 tablespoons olive oil
  • to taste Salt and pepper Season lightly at first.

  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the cubed chicken, season with salt and pepper, and sauté until browned and cooked through, about 6-7 minutes, stirring occasionally.
  3. Add the bite-sized asparagus and sauté for 2-3 minutes until bright green and tender-crisp.
  4. Stir in the orzo, then pour in the chicken broth and bring to a boil.
  5. Reduce heat and let simmer for 8-10 minutes, stirring occasionally, adding more broth if liquid is absorbed.
  6. Once orzo is tender, stir in the heavy cream and shredded cheese until melted into a creamy sauce.
  7. Taste and adjust seasoning if necessary, then garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for up to 3 months. Reheat gently with a splash of broth.
