- In a large pot, heat the olive oil over medium heat until shimmering.
- Add the cubed chicken, season with salt and pepper, and sauté until browned and cooked through, about 6-7 minutes, stirring occasionally.
- Add the bite-sized asparagus and sauté for 2-3 minutes until bright green and tender-crisp.
- Stir in the orzo, then pour in the chicken broth and bring to a boil.
- Reduce heat and let simmer for 8-10 minutes, stirring occasionally, adding more broth if liquid is absorbed.
- Once orzo is tender, stir in the heavy cream and shredded cheese until melted into a creamy sauce.
- Taste and adjust seasoning if necessary, then garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for up to 3 months. Reheat gently with a splash of broth.
