Ingredients
  

For the Herb Roasted Chicken
  • 2 leg quarters chicken leg quarters Fresh and organic chicken is recommended.
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Mashed Potatoes
  • 2 lbs potatoes, peeled and cubed Firm potatoes without blemishes are preferred.
  • 4 tbsp butter
  • 1/2 cup milk Substitute with almond milk for a dairy-free option.
  • Salt and pepper to taste Salt and pepper to taste
For the Honey Glazed Carrots
  • 1 lb baby carrots
  • 2 tbsp butter for glazed carrots
  • 1 tbsp honey
  • 1/2 tsp garlic powder
  • Salt and pepper to taste Salt and pepper to taste for glazed carrots
  • 1 tbsp chopped parsley for garnish

Method
 

Preparation
  1. Mix olive oil, minced garlic, dried parsley, thyme, paprika, salt, and pepper in a bowl. Rub the mixture all over the chicken legs and let marinate for at least 30 minutes.
  2. Preheat the oven to 425°F (220°C).
Cooking
  1. Place the marinated chicken on a baking sheet and roast for 45-50 minutes until golden brown and crispy.
  2. While the chicken is roasting, boil the cubed potatoes in salted water until fork-tender (about 15-20 minutes). Drain well.
  3. Mash the potatoes with butter, milk, salt, and pepper until creamy.
  4. In a skillet, sauté the baby carrots in butter over medium heat until tender (about 10 minutes). Add honey, garlic powder, salt, and pepper. Toss in chopped parsley before serving.
Serving
  1. Arrange the roasted chicken, creamy mashed potatoes, and honey-glazed carrots on a serving platter, garnished with fresh parsley.

Notes

This dish pairs well with roasted asparagus or a fresh garden salad. A nice white wine, such as Sauvignon Blanc, complements the flavors perfectly.
