Ingredients
  

Main Ingredients
  • 2 large large eggs
  • 6 slices halloumi cheese Look for fresh, firm cheese that isn’t overly processed.
  • 1 whole ripe avocado Should yield slightly to pressure for best flavor.
  • 1 tbsp olive oil Infuse with garlic or herbs for extra flavor.
  • 1 tsp black & white sesame seeds For garnish.
  • 1/2 tsp black pepper Adjust to taste.
  • 1/2 tsp salt Adjust to taste.

Method
 

Preparation
  1. Slice the halloumi into thick cubes.
  2. Heat olive oil in a pan over medium-high heat until it shimmers.
Cooking
  1. Cook the halloumi until golden and crispy, about 3-4 minutes.
  2. Gently crack the eggs into the pan after the halloumi is finished. Reduce heat to medium.
  3. Cook until the whites are set but yolks remain runny.
Assembly
  1. Slice the avocado while the eggs are cooking and sprinkle with sesame seeds.
  2. Layer the crispy halloumi, sunny-side-up eggs, and sliced avocado on a plate.
  3. Finish by sprinkling additional sesame seeds, salt, and black pepper on top.

Notes

Best enjoyed right after cooking, but can be stored in the fridge for up to 2 days. Can also be frozen for up to 1 month.
