Preparation
- Slice the halloumi into thick cubes.
- Heat olive oil in a pan over medium-high heat until it shimmers.
Cooking
- Cook the halloumi until golden and crispy, about 3-4 minutes.
- Gently crack the eggs into the pan after the halloumi is finished. Reduce heat to medium.
- Cook until the whites are set but yolks remain runny.
Assembly
- Slice the avocado while the eggs are cooking and sprinkle with sesame seeds.
- Layer the crispy halloumi, sunny-side-up eggs, and sliced avocado on a plate.
- Finish by sprinkling additional sesame seeds, salt, and black pepper on top.
Notes
Best enjoyed right after cooking, but can be stored in the fridge for up to 2 days. Can also be frozen for up to 1 month.
