Ingredients
  

For the Grilled Sausages
  • 4 pieces grilled beef or pork sausages Choose fresh, high-quality sausages.
  • 1 tbsp olive oil For brushing the sausages.
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
For the Fries
  • 4 large potatoes, cut into fries Firm potatoes without blemishes.
  • 2 tbsp vegetable oil For tossing the fries.
  • 1 tsp paprika
  • Salt to taste Salt
For the Potato Salad
  • 4 medium potatoes, boiled and diced
  • 3 pieces hard-boiled eggs, chopped
  • 1/2 cup mayonnaise Consider using homemade for richer taste.
  • 2 tbsp sour cream Can substitute with Greek yogurt for lighter version.
  • 2 tbsp chopped pickles
  • 1 tbsp mustard
  • 2 pieces green onions, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tbsp fresh parsley, chopped

Method
 

Prepare the Fries
  1. Preheat your oven or air fryer to 425°F (220°C). Toss the fresh potato fries with vegetable oil, paprika, garlic powder, and salt until well-coated. Bake or air-fry until golden brown and crispy, about 25-30 minutes.
Make the Potato Salad
  1. Combine boiled and diced potatoes with chopped hard-boiled eggs, mayonnaise, sour cream, pickles, mustard, green onions, salt, and black pepper in a large bowl. Mix gently until well combined, being careful not to mash the potatoes too much.
Grill the Sausages
  1. Brush the sausages with olive oil and season with garlic powder and black pepper. Preheat your grill to medium-high heat and cook the sausages for about 6-8 minutes, turning occasionally until browned.
Prepare the Tomatoes
  1. In a small bowl, toss halved cherry tomatoes with a pinch of salt and chopped parsley.
Assemble the Plate
  1. Arrange the grilled sausages, crispy fries, creamy potato salad, and seasoned cherry tomatoes on a serving plate with the salad in the center.

Notes

For storage, keep the dish in an airtight container for up to three days in the fridge. It can be frozen for up to two months.
