Preparation
- Rub the ribeye steaks with 2 tablespoons of olive oil, garlic powder, dried parsley, salt, and black pepper. Let them rest for about 20 minutes.
- Toss the cut potatoes in a bowl with 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of paprika. Spread them on a baking sheet or air fryer basket.
- In a bowl, combine diced tomatoes, cucumber, red onion, fresh parsley, olive oil, lemon juice, salt, and pepper. Toss gently.
Cooking
- Preheat your grill to high heat, then grill the steaks for 4-5 minutes per side for medium-rare. Place a tablespoon of butter on top in the last minute.
- Bake or air-fry the fries until golden, monitoring for crispiness.
Serving
- Arrange the grilled ribeye beside the crispy fries and the Mediterranean salad. Garnish with extra parsley.
Notes
Leftovers can be stored in the refrigerator for up to 3 days. Reheat the steak in a skillet and the fries in the oven.
