Preparation
  1. In a large bowl, combine the rinsed chickpeas, halved cherry tomatoes, diced cucumber, finely chopped red onion, crumbled feta cheese, and fresh parsley.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper until emulsified.
  3. Pour the dressing over the salad mixture and toss gently to combine.
  4. Let your salad sit for at least 10 minutes to allow the flavors to meld.
  5. Serve the salad chilled or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Add dressing before serving to maintain freshness.
