Ingredients
  

For the batter
  • 2 cups whole milk Gives the custard a rich flavor
  • 1 cup granulated sugar Adds sweetness and caramelization
  • 1/2 cup all-purpose flour Provides structure
  • 4 large egg yolks Contributes to creaminess
  • 1 tablespoon vanilla extract Enhances flavor
  • 1/4 cup dark rum Traditional addition for richness
  • 1/2 cup unsalted butter For greasing and adds richness

Method
 

Preparation
  1. In a medium saucepan, combine the milk and butter. Heat over low heat until the butter melts. Remove from heat and let cool slightly.
  2. In a bowl, whisk together the sugar, flour, and egg yolks until smooth. Gradually add the warm milk mixture and mix until combined.
  3. Stir in the vanilla extract and dark rum, blending everything until you have a smooth batter.
  4. Cover and refrigerate the batter for at least 24 hours to develop flavor and texture.
Baking
  1. Preheat your oven to 425°F (220°C). Generously grease your canele molds with melted butter.
  2. Pour the chilled batter into the prepared molds, filling them about three-quarters full.
  3. Place the canele molds in the oven and bake for 45-50 minutes until dark brown and firm to the touch.
  4. Remove from the oven and let them cool in the molds for a few minutes before inverting them onto a wire rack.

Notes

Use copper molds for best results. Be patient with the chilling of the batter to improve flavor and texture. Properly greasing ensures that your caneles release without sticking.
