Ingredients

For the cake
  • 2 cups all-purpose flour Essential for structure in the yeast dough
  • ½ cup milk Gives a moist texture to the cake
  • cup sugar Adds sweetness and aids in browning
  • 1 tablespoon active dry yeast The rising agent for the cake
  • 1 teaspoon vanilla extract For a beautiful aromatic flavor
  • ¼ cup unsalted butter For richness and flavor
  • 3 large eggs Provides moisture and binds the ingredients
For the filling
  • 1 cup heavy cream Used for the filling to achieve a rich and creamy texture
For the topping
  • ½ cup honey Adds sweetness and a delightful floral flavor
  • 1 cup sliced almonds For a crunchy topping

Method

Preparation
  1. In a small bowl, mix warm milk and sugar, then sprinkle yeast over it. Let it sit for about 5 minutes until frothy.
  2. In a large bowl, combine flour, eggs, melted butter, and vanilla extract. Gradually add the yeast mixture and knead dough for about 10 minutes until smooth.
Let it rise
  1. Place the dough in a greased bowl and cover it with a cloth. Let it rise in a warm place for about 1 hour or until it has doubled in size.
Prepare the honey-almond topping
  1. In a saucepan, melt butter, honey, and cream over low heat. Once combined, remove from heat and fold in sliced almonds. Set aside.
Assemble the cake
  1. Preheat your oven to 350°F (175°C). Roll out the dough to fit a greased baking dish or pizza stone. Evenly spread the honey-almond mixture over the top.
Bake
  1. Bake the cake for about 25-30 minutes or until golden brown. The topping should bubble and caramelize beautifully.
Make the filling
  1. Whip the heavy cream until stiff peaks form. Optionally, sweeten with a little sugar and vanilla to taste.
Slice and fill
  1. Allow the cake to cool completely, then slice it in half horizontally. Spread whipped cream on the bottom half and place the top layer back on.
Serve
  1. Dust with powdered sugar, slice, and enjoy this delicious cake that embodies the essence of German baking.

Notes

Don’t rush the rising process: Allow the dough to rise properly to ensure a fluffy cake. Room temperature ingredients: Ensure your eggs and butter are at room temperature for an even mix and better texture. Be gentle while mixing in the whipped cream: Fold it in slowly to maintain fluffiness.
