Preparation of Mashed Potatoes
- In a large pot, bring salted water to a boil. Add the Yukon Gold potatoes and cook until fork-tender, about 15-20 minutes.
- Drain the potatoes and let them steam for a minute to remove excess moisture.
Mashing Potatoes
- Add 2 tablespoons of butter, warm cream, and roasted garlic (if using) to the drained potatoes. Mash until smooth and creamy, adjusting with salt and pepper to taste.
Roasting Carrots
- Preheat your oven to 425°F (220°C). Toss the whole baby carrots with olive oil, honey, thyme, salt, and pepper on a baking sheet.
- Spread them in a single layer for even roasting and bake until caramelized.
Seasoning Lamb Chops
- Mix together olive oil, minced garlic, chopped rosemary, thyme, salt, and black pepper in a small bowl. Rub this mixture all over the lamb chops and let them sit at room temperature for 15 minutes.
Searing Lamb Chops
- Heat a skillet over medium-high heat. Once hot, add the lamb chops and sear for 3-4 minutes on each side until beautifully browned.
- Baste with melted butter from the pan for enhanced flavor.
Serving the Dish
- Arrange the lamb chops alongside the creamy mashed potatoes and honey roasted carrots on a serving platter.
- Drizzle some of the pan juices over the lamb, and garnish with chopped parsley and rosemary sprigs.
