Ingredients
  

For the Lamb Chops
  • 8 pieces lamb rib chops Fresh lamb should be bright red with a slight sheen.
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped Using fresh herbs enhances the flavor.
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Mashed Potatoes
  • 2 lbs Yukon Gold potatoes, peeled and cubed Choose firm, smooth-skinned potatoes for a perfect mash.
  • 2 tbsp butter
  • 1/2 cup warm heavy cream Consider dairy-free options like almond milk.
  • 1 tbsp roasted garlic (optional)
  • salt and pepper to taste
For the Honey Roasted Carrots
  • 1 lb whole baby carrots Look for vibrant, firm carrots.
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp thyme
  • salt and black pepper to taste
For Garnish
  • fresh parsley chopped for garnish
  • fresh rosemary sprigs for garnish

Method
 

Preparation of Mashed Potatoes
  1. In a large pot, bring salted water to a boil. Add the Yukon Gold potatoes and cook until fork-tender, about 15-20 minutes.
  2. Drain the potatoes and let them steam for a minute to remove excess moisture.
Mashing Potatoes
  1. Add 2 tablespoons of butter, warm cream, and roasted garlic (if using) to the drained potatoes. Mash until smooth and creamy, adjusting with salt and pepper to taste.
Roasting Carrots
  1. Preheat your oven to 425°F (220°C). Toss the whole baby carrots with olive oil, honey, thyme, salt, and pepper on a baking sheet.
  2. Spread them in a single layer for even roasting and bake until caramelized.
Seasoning Lamb Chops
  1. Mix together olive oil, minced garlic, chopped rosemary, thyme, salt, and black pepper in a small bowl. Rub this mixture all over the lamb chops and let them sit at room temperature for 15 minutes.
Searing Lamb Chops
  1. Heat a skillet over medium-high heat. Once hot, add the lamb chops and sear for 3-4 minutes on each side until beautifully browned.
  2. Baste with melted butter from the pan for enhanced flavor.
Serving the Dish
  1. Arrange the lamb chops alongside the creamy mashed potatoes and honey roasted carrots on a serving platter.
  2. Drizzle some of the pan juices over the lamb, and garnish with chopped parsley and rosemary sprigs.
