  • 2 pieces eggs Cook to a perfect jammy center.
  • 1 piece avocado Slice before serving.
  • 2 tbsp olive oil Can also use avocado oil.

  • 1 tsp black pepper For seasoning the salmon.
  • 1 tsp salt Adjust to taste.
  • 1 tsp dried parsley Can substitute fresh if available.
  • 1 tsp mixed herbs Herbs de Provence or Italian blend work well.
  • 1 tbsp butter For searing the salmon.

Method

Preparation
  1. Boil the baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain and toss with olive oil, minced garlic, dried parsley, and mixed herbs.
  2. In a separate pot, place eggs in boiling water and let them cook for 7-8 minutes for a perfect jammy center. Transfer them to an ice bath to stop cooking.
  3. Rub the salmon fillet with paprika, salt, black pepper, minced garlic, and dried herbs.
Cooking
  1. Heat butter along with a tablespoon of olive oil in a skillet over medium-high heat. Sear the salmon skin-side down for 4-5 minutes, then flip and cook for another 4-5 minutes.
Assembly
  1. Slice the avocado and carefully peel the soft-boiled eggs. Plate the crispy salmon with herb potatoes, sliced avocado, and eggs. Garnish with extra herbs.

Notes

Serve with steamed greens and a crisp white wine for a delightful meal. This dish keeps well in the fridge for up to 3 days and can be frozen for up to 2 months. When reheating, do so in a skillet on low heat to maintain texture.
