Method
Preparation
- Boil the peeled and cubed potatoes in salted water until they reach fork-tender status, about 15-20 minutes.
- Pat the salmon dry and season it with paprika, garlic powder, salt, and pepper.
Cooking the Salmon
- Heat olive oil in a skillet over medium-high heat and gently place the salmon fillets skin-side down. Cook for about 4-5 minutes per side until golden brown and flake-apart tender.
Cooking the Shrimp
- In a separate skillet, melt the butter over medium heat, add minced garlic cooking until fragrant, then add the shrimp and cook for 2-3 minutes until pink and opaque.
Preparing the Green Beans
- Steam or sauté fresh green beans in butter, seasoning with salt and pepper until tender-crisp.
Mashing the Potatoes
- Once the potatoes are tender, drain and return them to pot. Add butter, milk, salt, and pepper, then mash until smooth and creamy.
Plating
- Spoon a generous portion of mashed potatoes onto each plate, top with garlic butter shrimp and salmon. Garnish with green beans, lemon slices, and drizzle extra garlic butter sauce over.
Notes
For an extra zing, add a spoonful of Dijon mustard to the garlic butter sauce. Using a potato ricer ensures a silky smooth texture for mashed potatoes.
