Ingredients
  

For the salmon
  • 2 fillets salmon fillets Choose fresh salmon with a bright color and a mild smell.
  • 2 tbsp olive oil Helps spices adhere and adds flavor.
  • 2 tbsp butter Can substitute with a non-dairy alternative.
  • 3 cloves garlic, minced Freshly minced for the best flavor.
  • 1 tsp paprika Adds color and flavor.
  • 1 tsp black pepper
  • 1 tsp salt Adjust to taste.
  • 1 tsp dried parsley For garnish and flavor.
  • 1 tbsp lemon juice Freshly squeezed for brightness.
For the potatoes
  • 8 pieces baby potatoes Small, firm potatoes roast better.
  • 1 tsp garlic powder
  • 1/2 tsp black pepper Adjust to taste.
  • Salt to taste Salt
For the asparagus
  • 1 bunch asparagus Bright green and tender-crisp for best texture.

Method
 

Preparation
  1. Rub the salmon fillets with olive oil.
  2. Season the salmon with paprika, minced garlic, dried parsley, salt, and black pepper.
  3. Boil the baby potatoes in a pot until fork-tender, about 10-15 minutes.
  4. Drain the potatoes and toss them in a bowl with olive oil, garlic powder, salt, and pepper.
  5. Heat butter in a skillet over medium heat, then add the seasoned salmon.
  6. Cook the salmon for 4-5 minutes per side until golden and flaking.
  7. Sauté asparagus in a pan with olive oil, garlic, salt, and pepper until tender-crisp, about 3-5 minutes.
Serving
  1. Plate the salmon alongside the roasted baby potatoes and asparagus.
  2. Garnish with an extra sprinkle of parsley.

Notes

Enhance flavor with a splash of white wine during cooking. Allow salmon to come to room temperature before cooking for even cooking.
