- Brown the ground beef in a big pot over medium heat, breaking it up as it cooks.
- Add onion and carrots, cooking for 3 to 4 minutes until they soften slightly.
- Stir in garlic, salt, pepper, paprika, and thyme.
- Add potatoes, diced tomatoes, tomato paste, and beef broth.
- Bring to a gentle boil, then reduce heat and let it simmer for 20 to 25 minutes until the potatoes are tender.
- To thicken the stew, sprinkle in flour or use a cornstarch slurry, then simmer for an additional 3 to 5 minutes.
Notes
This stew keeps well in the fridge for 3-4 days, and flavors improve when reheated. Best prepped ahead but can also be made fresh in one pot.
