  • 1 tsp paprika for chicken
  • 1 tsp garlic powder for chicken
  • 1 tsp onion powder for chicken
  • 1 tsp dried thyme
  • 1 tsp salt for chicken
  • 1/2 tsp black pepper for chicken
For the Potato Wedges
  • 5 medium potatoes cut into wedges
  • 2 tbsp olive oil for potato wedges
  • 1 tsp paprika for potato wedges
  • 1/2 tsp garlic powder for potato wedges
  • 1 tsp salt for potato wedges
  • 1/2 tsp black pepper for potato wedges
For the Salad
  • 2 cups lettuce chopped
  • 1 cucumber sliced
  • 2 tomatoes cut into wedges
  • 1 carrot julienned
  • 1 tbsp olive oil for salad
  • 1 tbsp lemon juice
  • to taste salt and pepper for salad

Method

Preparation
  1. Preheat the Oven: Start by preheating your oven to 425°F (220°C).
  2. Season the Chicken: In a bowl, mix olive oil, paprika, garlic powder, onion powder, thyme, salt, and pepper. Rub this mixture generously over the chicken thighs.
  3. Prep the Potato Wedges: In another bowl, toss the potato wedges with olive oil, paprika, garlic powder, salt, and pepper.
Cooking
  1. Arrange on Baking Tray: Lay the seasoned chicken thighs skin-side up on a baking sheet alongside the potato wedges.
  2. Bake: Place the tray in the oven and bake for 40–45 minutes, or until the chicken skin is deeply browned and crispy.
  3. Prepare the Salad: While the chicken and potatoes bake, toss together chopped lettuce, cucumber, tomatoes, and julienned carrots in a large bowl, drizzle with olive oil and lemon juice, and add salt and pepper to taste.
Serving
  1. Once everything is beautifully roasted, plate the crispy roasted chicken thighs alongside golden potatoes and the refreshing salad.

Notes

For the best flavor, consider marinating the chicken in spices a few hours or overnight. Use skinless chicken for a lighter option or substitute with sweet potatoes.
