Method
Marinate the Chicken
- In a large bowl, mix together the buttermilk, hot sauce, salt, and black pepper. Add the chicken drumsticks, ensuring they are well coated. Let them marinate for at least 4 hours, or overnight if possible.
Prepare the Coating
- In another large bowl, combine the flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper. Whisk thoroughly to avoid lumps.
Fry the Chicken
- Heat vegetable oil in a deep pan to 350°F (175°C). Dredge each marinated drumstick in the flour mixture, pressing it firmly for an even coating. Fry them for 12 to 15 minutes until golden brown and internal temperature reaches 165°F (75°C).
Cook the Fries
- While the chicken is frying, prepare the fries. Fry the potato strips in batches for 5 to 7 minutes per batch until golden and crispy, then drain on paper towels and season with salt.
Assemble and Serve
- On a large platter, arrange the fried chicken drumsticks beside the fries and fresh salad. Garnish with tomato wedges and red onion rings.
Notes
Crispy fried chicken can be stored in the fridge for up to 3 days. To reheat, use an oven set to 375°F (190°C) for about 15 minutes to keep the chicken crispy. Consider storing chicken, fries, and salad separately to maintain freshness.
