Preparation
- Preheat the oven to 325°F (160°C) and prepare a baking dish with water for a water bath.
- Whisk egg yolks and sugar together in a bowl until it becomes pale and thick.
- Heat the cream in a saucepan over medium heat until just simmering, then slowly pour it into the egg mixture while whisking constantly.
- Add vanilla extract and mix well. Strain the mixture through a fine sieve to ensure a smooth custard.
- Pour the custard into ramekins, filling each about three-quarters full. Place the ramekins in the baking dish and add hot water until it reaches about halfway up the sides of the ramekins.
Baking
- Bake for about 30-40 minutes or until the custard is set but still jiggles in the center.
- Remove from the oven and let cool, then chill in the refrigerator for several hours or overnight.
Caramelizing
- Before serving, sprinkle a thin layer of sugar on top and use a kitchen torch to caramelize until golden and crispy.
- If you don’t have a torch, you can place the ramekins under a broiler for a short time.
