- In a medium pot, melt 2 tablespoons of butter or warm 2 tablespoons of olive oil over medium heat.
- Add the chopped onion with a pinch of salt. Cook for about 5 to 7 minutes until soft and slightly sweet.
- Add minced garlic and sauté for 30 seconds.
- Stir in 1 to 2 tablespoons of tomato paste and cook for about a minute.
- Pour in the canned tomatoes and 2 cups of broth. If using whole tomatoes, break them up with a spoon. Bring to a gentle simmer.
- Let it bubble softly for 15 to 20 minutes. If you have fresh basil, add a few leaves now, or use a small pinch of dried basil.
- Turn off the heat and blend the soup until smooth using an immersion blender or regular blender.
- Return the soup to low heat and stir in 1/3 to 1/2 cup of cream. Adjust seasoning with salt, pepper, and sugar if necessary.
Notes
If the soup seems too thick, add more broth. If too thin, let it simmer a bit longer. Serve with crusty bread or grilled cheese for a full meal.
