Creamy Tomato Soup

  • 2 tablespoons butter or olive oil Use butter for a richer taste or olive oil for a lighter option.
  • 1 medium onion, chopped Chopped small so it softens fast.
  • 3 cloves garlic, minced Garlic and tomatoes pair well.
  • 1 can (28 ounce) canned whole or crushed tomatoes Fresh tomatoes can be used in summer.
  • 1-2 tablespoons tomato paste Deepens the flavor.
  • 2 cups broth (vegetable or chicken) Water can be used in a pinch.
  • 1/3-1/2 cup heavy cream Or half and half for a lighter option.
  • to taste salt and pepper Adjust according to preference.
  • 1 pinch sugar (optional) Helps balance tangy tomatoes if needed.
  • a few leaves fresh basil Dried basil can also be used.

Method
 

Preparation
  1. In a medium pot, melt 2 tablespoons of butter or warm 2 tablespoons of olive oil over medium heat.
  2. Add the chopped onion with a pinch of salt. Cook for about 5 to 7 minutes until soft and slightly sweet.
  3. Add minced garlic and sauté for 30 seconds.
  4. Stir in 1 to 2 tablespoons of tomato paste and cook for about a minute.
  5. Pour in the canned tomatoes and 2 cups of broth. If using whole tomatoes, break them up with a spoon. Bring to a gentle simmer.
  6. Let it bubble softly for 15 to 20 minutes. If you have fresh basil, add a few leaves now, or use a small pinch of dried basil.
  7. Turn off the heat and blend the soup until smooth using an immersion blender or regular blender.
  8. Return the soup to low heat and stir in 1/3 to 1/2 cup of cream. Adjust seasoning with salt, pepper, and sugar if necessary.

Notes

If the soup seems too thick, add more broth. If too thin, let it simmer a bit longer. Serve with crusty bread or grilled cheese for a full meal.
