Ingredients
  

Vegetables
  • 2 medium eggplants adds a savory depth; choose firm ones
  • 3 medium zucchinis adds freshness and balance

  • 4 cloves garlic for that aromatic punch
Sauce and Cream
  • 1 can crushed tomatoes 28 oz; base of the sauce; fresh tomatoes can also be used
  • 1 cup heavy cream for rich creaminess; substitute with coconut milk for a dairy-free option
  • 2 teaspoons dried thyme essential for depth of flavor
  • 1 tablespoon olive oil for sautéing
  • to taste salt to taste
  • to taste pepper to taste
Garnish
  • 1 bunch fresh basil for garnish; optional, but adds freshness

Method
 

Preparation
  1. Dice the eggplants, zucchinis, onion, bell peppers, and mince the garlic. Make sure the pieces are roughly the same size for even cooking.
Sautéing
  1. In a large pan, heat a generous amount of olive oil over medium heat. Add the onion and bell peppers, cooking until they're softened, about 3-5 minutes.
  2. Stir in the minced garlic and cubed eggplant. Cook for about 5 minutes until the eggplant starts to soften.
Simmering
  1. Pour in the crushed tomatoes and add dried thyme. Stir well and season with salt and pepper. Let the mixture simmer for 10 minutes to develop flavors.
  2. Add the zucchinis and heavy cream to the pan, stirring until everything is combined. Allow it to simmer for another 10 minutes, until the zucchini is tender and the sauce is bubbling.
Serving
  1. Give it a taste and adjust seasoning if necessary. If you prefer a little kick, a pinch of red pepper flakes can elevate the flavor nicely.
  2. Garnish with fresh basil before serving. You can enjoy it warm with crusty bread or over a bed of rice.

Notes

For best results, salt the eggplant before use to reduce bitterness. Use high-quality ingredients for the best flavor. Allow the dish to simmer longer for more developed flavors. Experiment with different herbs and vegetables for variations.
