Method

Preparation
  1. Rub the chicken thighs with olive oil, garlic powder, paprika, dried thyme, salt, and black pepper.
  2. Heat a skillet over medium-high heat and sear the chicken thighs skin-side down for about 5-7 minutes until golden brown.
  3. Boil the cubed Yukon Gold potatoes in salted water until fork-tender, about 15-20 minutes.
Cooking
  1. Drain the potatoes and return them to the pot. Add butter, warm milk, salt, and pepper, mashing until creamy.
  2. In a separate skillet, melt 1 tbsp of butter over medium heat. Add the baby carrots, honey, dried thyme, salt, and pepper, cooking until tender and glossy, about 8-10 minutes.
  3. Sauté minced garlic in the leftover butter from the chicken until fragrant. Add chicken broth, heavy cream, Dijon mustard, and cracked pepper. Simmer for 5-10 minutes, stirring until thick and silky.
Serving
  1. Serve mashed potatoes on a plate, placing the chicken thighs atop. Spoon over the peppercorn sauce and garnish with chopped parsley. Arrange glazed carrots on the side.

Notes

For best flavor, marinate chicken overnight. To save time, prepare mashed potatoes in advance and reheat gently. Adjust seasonings to fit personal preferences.
