Preparation
- Slice chicken breasts in half lengthwise to ensure even cooking. Pat dry and season with salt and pepper, then lightly coat with flour.
- Heat a skillet over medium to medium-high heat, add butter and a small splash of oil. Sear the chicken until golden on both sides (about 3-4 minutes each side). Move to a plate.
- Lower the heat and add minced garlic to the pan. Stir for about 30 seconds or until fragrant but not burnt.
Cooking
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan for added flavor. Let it bubble for 1-2 minutes.
- Stir in the heavy cream and (if desired) the parmesan, mixing until smooth.
- Return the chicken to the pan and let it simmer gently until cooked through (about 5-8 minutes). Sprinkle with parsley before serving.
Notes
The sauce can be adjusted to your preference for thickness with more broth or by cooking it longer. It pairs well with rice, pasta, or mashed potatoes for a cozy meal.
