Ingredients

Main Ingredients
  • 1 cup wild rice Opt for high-quality wild rice for the best flavor.
  • 1 pound chicken breasts, cooked and shredded Using homemade chicken broth is recommended.
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth Homemade broth greatly enhances flavor.
  • 1 cup heavy cream For a lighter option, consider using half-and-half.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper Adjust seasoning to your taste.
  • as needed Fresh parsley for garnish For garnish.

Method

Cooking the Wild Rice
  1. In a large pot, combine the wild rice with 4 cups of chicken broth. Bring it to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the rice is tender.
Sautéing the Vegetables
  1. While the rice is cooking, heat a separate skillet over medium heat. Add the diced onions, carrots, and celery, sautéing until they are softened and fragrant—about 5-7 minutes.
Combining Ingredients
  1. Once the wild rice is tender, stir in the sautéed vegetables and the shredded chicken. Mix well to incorporate everything nicely.
Adding Cream and Seasonings
  1. Pour in the heavy cream and sprinkle in the garlic powder, seasoning with salt and pepper to taste. The mixture should look rich and creamy at this point.
Final Simmer
  1. Let the soup simmer for an additional 10 minutes, allowing the flavors to meld together. Stir occasionally and check for the desired thickness.
Serving
  1. Serve the soup hot, garnished with fresh parsley for a pop of color and freshness.

Notes

This soup pairs well with crusty bread or a side salad. Store leftovers in an airtight container for up to four days or freeze for up to three months. For a thicker soup, blend a portion of the cooked rice and stir back in after adding cream.
