Ingredients

Chicken and Spaghetti
  • 2 pieces chicken breasts Opt for organic or free-range for better flavor.
  • 300 g spaghetti A high-quality spaghetti will hold the sauce well.
Cooking Ingredients
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic (minced)
Creamy Sauce Ingredients
  • 1 cup heavy cream Substitute with Greek yogurt for a lighter version.
  • 1 cup cheddar cheese (shredded) Use freshly grated for better melt.
  • 1/2 cup parmesan cheese Use freshly grated for better melt.
Seasonings
  • 1 tsp paprika
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1 tbsp parsley flakes For garnish.

Method

Preparation
  1. Rub the chicken breasts with paprika, Cajun seasoning, garlic powder, black pepper, salt, and Italian seasoning.
  2. Boil the spaghetti in salted water until al dente. Reserve a cup of pasta water before draining.
Cooking
  1. Heat olive oil in a pan over medium-high heat. Add the chicken and sear until golden brown and charred on both sides, about 5-7 minutes per side.
  2. Remove the chicken from the pan. Add butter and sauté the minced garlic until fragrant, then pour in the heavy cream and mix in cheddar and parmesan until thickened.
  3. Toss the cooked spaghetti in the creamy sauce and mix thoroughly.
Serving
  1. Slice the chicken and serve on top of the pasta, drizzling extra sauce over for presentation.

Notes

Pair with garlic bread and a fresh green salad. For a lighter option, use Greek yogurt instead of heavy cream.
