Ingredients
  

For the Chicken
  • 1-1.25 pounds boneless skinless chicken breast or thighs, sliced thin Use thighs for juiciness.
Vegetables
  • 4 cups mixed vegetables like bell pepper, broccoli, snap peas, carrots, onion Use whatever vegetables you have.
Aromatics
  • 2-3 cloves garlic
  • 1 teaspoon fresh ginger Add more if you love it.
Sauce Base
  • 1/3 cup low sodium soy sauce Adjust according to taste.
  • 1.5 tablespoons honey or brown sugar For sweetness.
  • 1 tablespoon rice vinegar or lime juice For tang.
  • to taste sriracha or red pepper flakes Optional heat.
Thickener
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
Cooking Oil
  • 1-2 tablespoons neutral oil (like avocado or canola) For cooking.

Method
 

Preparation
  1. In a small bowl, stir together soy sauce, honey, rice vinegar, and optional sriracha. Set it aside.
  2. Slice the chicken thin. If it's difficult to cut, freeze it for 10 minutes.
Cooking
  1. Heat your pan until hot. Add oil, then add the chicken in a single layer. Cook without stirring for a minute or two, then stir until cooked through and remove to a plate.
  2. Add more oil if needed and toss in the onions and harder vegetables (broccoli and carrots). After 2-3 minutes, add the softer vegetables (peppers and snap peas). Cook until bright and crisp.
  3. Add garlic and ginger. Stir for 20-30 seconds until fragrant.
  4. Reintroduce the chicken and pour in the sauce. Stir, then add the cornstarch slurry. Cook until the sauce turns shiny and thick.
  5. Taste and adjust the flavor with more vinegar for tang, honey for sweetness, or a pinch of salt as needed.

Notes

For best results, prep everything before cooking to keep the process quick. Store leftovers in the fridge for 3-4 days, reheating with a splash of water to loosen the sauce.
