  • 1 piece bell pepper Any color bell pepper can be used.
  • 1 piece onion Yellow or red onion works well.
  • 1 tablespoon fajita seasoning Feel free to adjust to taste.
  • 1 can black beans, drained and rinsed For a hearty base.
  • 2 cups cooked cilantro lime rice Can be prepared in advance.
  • 1 tablespoon olive oil For cooking.

  • to taste fresh cilantro for garnish Optional for serving.

Method
 

Preparation
  1. Heat a splash of olive oil in a large skillet over medium heat until it shimmers.
  2. Slice the chicken, bell pepper, and onion into bite-sized pieces.
Cooking
  1. Add the sliced chicken to the skillet and sprinkle with fajita seasoning. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through.
  2. Add the bell pepper and onion to the skillet, cooking for another 3-5 minutes until softened but still crisp.
Assembly
  1. In serving bowls, layer the cilantro lime rice, followed by black beans, and then top with the sauted chicken and vegetables.
  2. Garnish with fresh cilantro and serve immediately.

Notes

For meal prep, prepare ingredients in advance. Leftovers can be stored in an airtight container in the fridge for up to 3 days, or frozen for 2 months.
