For the Chicken

For the Potatoes

For the Salad

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) while you prepare the chicken.
  2. In a bowl, combine olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Rub this mixture generously over the chicken.
Cooking the Chicken
  1. Place the chicken in a baking dish and bake for 35 minutes until the skin turns golden brown.
  2. Sprinkle shredded cheddar cheese over the chicken and return it to the oven for an additional 10-15 minutes, until the cheese is bubbly.
Cooking the Potatoes
  1. While the chicken bakes, boil the baby potatoes in salted water until fork-tender, about 15 minutes.
  2. Drain the potatoes, then toss them with melted butter, olive oil, garlic powder, parsley, and seasoning.
Preparing the Salad
  1. Combine chopped lettuce, sliced cucumber, cherry tomatoes, and red onion in a large bowl.
  2. Dress with olive oil, lemon juice, salt, and pepper.
Serving
  1. When the chicken is ready, arrange it on a plate next to the herbed potatoes and salad. Garnish with freshly chopped parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze the chicken and potatoes for up to 3 months. Reheat in the oven at 350°F (175°C).
