Preparation
- Begin by boiling the potatoes in salted water until fork-tender, about 15-20 minutes.
- Once tender, drain the potatoes, then mash them with butter, milk, salt, and pepper until smooth.
Cook the Creamy Vegetables
- In a skillet, sauté minced garlic in one tablespoon of butter until fragrant, about 1 minute.
- Add broccoli and zucchini, then pour in heavy cream and mix in Parmesan cheese until veggies are coated. Avoid overcooking the vegetables.
Season & Sear the Salmon
- Brush the salmon fillets with olive oil, then sprinkle both sides with Cajun seasoning, paprika, garlic powder, salt, and pepper.
- Heat your skillet until hot and place the salmon skin-side down, cooking for 4-5 minutes before flipping.
Cook the Garlic Shrimp
- Melt butter in a separate skillet, adding minced garlic to infuse flavor.
- Add shrimp, seasoning them lightly with paprika, Cajun seasoning, and salt. Cook until they turn pink and slightly opaque, about 3-4 minutes.
Assemble & Serve
- On plates, spoon a generous amount of mashed potatoes as your base, layering the seared salmon and garlic shrimp on top.
- Finish with a heap of creamy vegetables and garnish with chopped parsley and red pepper flakes.
Notes
This dish can be stored in the fridge for up to 3 days. For freezing, wrap portions tightly and store in a freezer-safe container for up to 2 months. Reheat gently in the microwave.
