Preparation
- In a skillet, toast the guajillo and ancho chiles over medium heat until fragrant, about 2-3 minutes.
- Remove the chiles from the heat and soak them in hot water for about 15 minutes.
Sauce Preparation
- In a blender, combine the soaked chiles, beef broth, chopped onion, minced garlic, oregano, cumin, cinnamon, salt, and pepper.
- Blend until smooth to create the flavorful cooking sauce.
Cooking
- Place the beef chuck roast in the crockpot and pour the blended sauce over it, then add the bay leaves on top.
- Cook on low for 8-10 hours or until the beef is fork-tender.
Serving
- Once cooked, shred the beef with two forks. Serve it either in bowls for a stew or in corn tortillas.
- Dip the tortillas in the rich consomme for added flavor.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat gently on the stovetop to maintain tenderness.
