  • 4 pieces Bone-in, skin-on chicken thighs
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder Optional but recommended
  • 1 teaspoon Paprika Optional for color
  • 1 tablespoon Olive oil Just a little for rubbing
  • 2 tablespoons Butter For the sauce
  • 3 cloves Fresh garlic, minced
  • 2 tablespoons Lemon juice Or a splash of vinegar
  • 1 tablespoon Fresh parsley Optional, for garnish

Method
 

Preparation
  1. Preheat your oven to 425 F (220 C). Line a sheet pan with foil for easy cleanup, and place a wire rack on top if available.
  2. Pat the chicken thighs dry with paper towels to ensure crispiness.
  3. Rub the thighs with olive oil and season generously with salt, pepper, garlic powder, and paprika.
Cooking
  1. Place the chicken thighs skin side up on the wire rack and bake in the preheated oven for 35 to 45 minutes, or until the skin is golden and juices run clear.
  2. While the chicken is baking, melt butter in a small pan and add minced garlic. Cook for about 30 seconds to 1 minute, then turn off the heat and add lemon juice.
  3. Taste and adjust salt if necessary.
  4. Spoon the garlic butter sauce over the chicken thighs immediately after they come out of the oven.

Notes

For maximum crunch, spoon a little sauce on the meat side and leave most on the skin. Serve extra sauce at the table.
