  • 1 cup ackee (cleaned and boiled) Select fresh and brightly colored ackee.
  • 4 pieces eggs Beaten with salt and black pepper.
  • 1 tbsp butter For sautéing.
  • 1/2 small onion (sliced) Adds flavor to the dish.
  • 1 small red bell pepper (diced) For color and sweetness.
  • 1 tsp black pepper For seasoning.
  • 1/2 tsp salt To taste.
Serving Accompaniments
  • 2 pieces boiled yellow yam A hearty side.
  • 1 piece avocado (sliced) Fresh and creamy.
  • 1 piece tomato (sliced) Adds freshness.
  • 1 handful fresh watercress or greens For a fresh touch.

Method
 

Cooking
  1. Heat butter in a pan over medium heat until it bubbles lightly.
  2. Add onions and bell peppers to the pan and sauté until soft, around 5-7 minutes.
  3. Gently add boiled ackee to the sautéed vegetables and stir lightly for about 2 minutes.
  4. In a separate bowl, beat the eggs with salt and black pepper until combined.
  5. Pour the egg mixture into the pan, stirring softly, and cook until just set and fluffy, about 3-4 minutes.
  6. While eggs cook, slice the avocado and tomatoes, and rinse the fresh greens.
  7. Arrange boiled yam, scrambled eggs, avocado slices, tomato slices, and fresh greens beautifully on a plate.

Notes

To enhance flavor, consider adding nutmeg to the eggs. For creaminess, add a splash of milk. Avoid overcooking eggs for better texture.
